Muddle jalapeño slices, mint leaves, and honey together. Add in plant vodka, and grapefruit juice. Shake shake shake. Double strain into collins glass and top with ginger beer. Garnish with jalapeño slices inside glass and on rim small grapefruit wedge with mint leaf.
1.5oz PLANT Vodka, 1 oz fresh squeezed grapefruit juice, 2 slices locally grown jalapeno, 2 fresh mint leaves, .05 oz local honey, 2.5oz ginger beer.
